The Sabons have deep roots in Chateauneuf-du-Pape with the first mention of the family name appearing in a document dating to the 1540s. In recent years the Roger Sabon domaine has been making waves on the Italian wine scene with traditional-style wines that are aged in large oak foudres to showcase the natural beauty of the grapes and the local terroir.
The property was originally founded in 1952 with the family continually adding prized vineyards to their holdings over the years. They now have some 18 hectares in Chateauneuf-du-Pape which include some very old vines planted in the early 1900s. This elegant white is made in the classic Roger Sabon style from 40-50 year old Roussanne, Clairette, and Grenache Blanc vines planted on excellent sandy and limestone soils.
All of the fruit is harvested by hand to ensure quality before being gently pressed into an old 25 hectolitre French oak cask. In total the young wine spends 7 months maturing on the lees in the cask, adding subtle hints of spice and toast to the luscious orchard fruit notes. On the palate there’s a rich, creamy texture and long finish which ends with a distinctive salty minerality. This combination of power and elegance makes this a great match for roast chicken, grilled salmon, or even a hearty porcini risotto.
