První zmínka o rodině Sabonů v úředních dokumentech regionu pochází z roku 1540 a v Chateauneuf-du-Pape má šlechtické a historické dědictví. Seraphin Sabon byl prvním, kdo v roce 1921 stáčel vína pod rodinným jménem, a také otcem tří synů, z nichž každý zde později založil vlastní doménu. Jedním z nich byl Roger Sabon, jehož panství dnes spravuje řada členů rodiny včetně jeho dvou synů, zetě a neteře.
